This delicious breakfast casserole is a healthy twist on a classic. Most breakfast casseroles use frozen hash browns or tater tots, but this one starts with fresh, roasted potatoes that get topped with cheese, smoked turkey, fresh spinach, red onions, eggs and seasonings. It all comes together to make a delicious, cheesy casserole that’s perfect for both breakfast and dinner!
WHAT YOU NEED
For the roasted potatoes:
1.5 pounds of potatoes, diced – I used baby golden potatoes.
4 tablespoons butter, melted
1/2 teaspoon smoked paprika – Regular paprika works too, but I LOVE the extra flavor in the smoked paprika.
1/2 teaspoon salt
1/2 teaspoon pepper
For the egg mix:
8 large eggs
1/2 cup milk
1/4 teaspoon smoked paprika – Again, regular paprika would work too.
1/2 teaspoon salt
1/4 teaspoon pepper
The rest:
1 cup spinach, packed
1/2 red onion, chopped fine
10 slices smoked deli turkey
1 cup cheese – I used a Mexican-style blend of cheese. I get this kind at Costco.

STEP-BY-STEP INSTRUCTIONS
You want to start with roasting the potatoes. Chop the potatoes into bite-sized pieces, about an inch in diameter or so.
Preheat the oven to 375 degrees and spray a 9×13 casserole dish with cooking spray.
In a large bowl, add four tablespoons of butter and microwave for about 15-20 seconds, until it’s fully melted. Add ½ teaspoon each of smoked paprika, salt and pepper to the butter and mix well.
Next, add the potatoes to the bowl and gently mix to combine.
Spread the potatoes evenly along the bottom of the baking dish and cook for 20 minutes, stirring halfway.
While you wait for the potatoes, you can use the same large bowl to mix your eggs. Add the eggs, milk, smoked paprika, salt, and pepper to the bowl and mix well. Set bowl aside.
Next, chop the spinach, red onion and turkey into small pieces.
Once potatoes are done, turn oven down to 350 degrees. (The potatoes should be soft when poked with a fork.)
Then, add the remaining ingredients. Start by sprinkling the cheese on top of the potatoes. Then add the turkey.
Add the spinach and red onions. Gently mix it all together.
Next, pour the egg mixture evenly over the top. (Tip: pour very slow and it will be easier to evenly distribute.)
Place it back in the oven at 350 degrees and bake for another 35-40 minutes, or until eggs have set.
You can enjoy this casserole as is, or you can add some toppings! Fresh salsa, sour cream and avocado slices go really well on this.

Sprinkle the cheese on top of the potatoes. Then, add the turkey, spinach and red onions to the top of the cheese. Gently mix together and spread evenly across the bottom of the pan.

Next, pour the egg mixture evenly over the top of the potato mix. (Tip: pour slowly and it will be easier to evenly distribute.)

Put it back in the oven at 350 degrees and bake for 35-40 minutes. (It's done when the center is firm and a toothpick comes out clean when poked in the center of the casserole.) Let it cool for 5-10 minutes.

Serve with some fresh salsa or sour cream on top, and enjoy!
