This Creamy Garlic Pasta is my new favorite one pot recipe. I am such a huge fan of one pot meals because the less dishes to clean up at the end, the better!
I love this one because it’s quick, easy and full of flavor. It all starts by cooking your favorite kind of noodles, and then using the same pot to make a delicious, creamy garlic Parmesan sauce. It all comes together in less than twenty minutes, which makes it a perfect weeknight meal that the whole family will love.
WHAT YOU NEED
1 ½ cups of favorite kind of pasta**
2 cups of spinach, packed
6 tablespoons of butter
1 tablespoon of minced garlic
½ cup of heavy whipping cream
½ cup of Parmesan cheese
2 teaspoons of salt
1 teaspoon of pepper
**I used elbow macaroni noodles, because that’s what I had on hand, but you could use any kind of pasta you want. Rotini, shells, bow-tie, penne and fusilli would all work just as well.
As far as dishes go, all you need is a large pot to cook everything in and a strainer to drain the noodles.
First, fill a large pot with water and turn heat to high.
While you wait for the water to boil, chop the spinach into small pieces.
Add pasta to the water once it’s boiling, and cook according to the package. Once it’s done, drain the noodles and leave in the strainer while you make the sauce.
Return the pot to the same burner you were using to cook the noodles. Turn the heat to medium and add the butter and garlic. Cook for a minute or two, until the butter is mostly melted and mixed well with the garlic.
Next, add the chopped spinach, cream and Parmesan cheese to the pot. Stir until everything is mixed well and then turn heat down to medium-low. Cook for another minute or two, stirring often.
Once the sauce is done, add the noodles back to the pot and stir well until everything is combined. Serve with some additional Parmesan, if you want, and enjoy!

One Pot Creamy Garlic Pasta with Spinach
- 1 ½ cups macaroni noodles** uncooked
- 2 cups spinach, packed
- 6 tbsp butter
- 1 tsbp minced garlic
- ½ cup heavy whipping cream
- ½ cup Parmesan cheese
- 2 tsp salt
- 1 tsp pepper
Bring a large pot of water to a boil. While you wait, roughly chop the spinach into small pieces.
Once water is boiling, cook pasta according to the package instructions. Drain well and leave noodles in the strainer while you make the sauce.
Return the pot to the same burner you were using and add the butter and garlic. Turn heat to medium and cook for a minute or two, until butter is melted and mixed with the garlic.
Next, add the chopped spinach, cream and Parmesan to the pot.
Turn heat down to medium-low and stir until everything is mixed well. Cook for another minute or two, stirring frequently.
Once sauce is done, add the noodles back to the pot and mix it all together. Top with additional Parmesan if you want, and enjoy!
** or 12 ounces of any kind of pasta will work (penne, bow-tie, rotini, etc.)
