INGREDIENTS
It takes just minimal ingredients to make these deliciously sweet No Bake Funfetti Cookies. You probably even have most of these on hand already:
- Butter
- Sugar
- Milk
- Vanilla extract
- Quick cook oats – You specifically want to use quick cook oats for best results. They absorb the liquid ingredients quickly, helping the cookies set up properly without being too dry or too mushy. Using quick oats ensures that the cookies hold together well and have the perfect consistency.
- Sprinkles – Any of your favorite sprinkles will do! I love using regular rainbow sprinkles.

STEP-BY-STEP INSTRUCTIONS
Measure out all the ingredients and line two baking sheets with parchment paper.
In a medium or large sized saucepan, add the butter, sugar and milk. Cook over medium heat, making sure to stir often until the butter is melted and everything is smooth. Bring the mixture to a gentle boil and allow it to boil for about one minute, stirring often. (Careful not to overboil it.)
Remove pan from the heat and stir in the vanilla extract. Once that’s well combined, add the oats and mix well until most of them are coated. Then, add the sprinkles and gently fold them into the mix.

Using a cookie scoop or a spoon, scoop out a spoonful of the mix and drop it on the prepared baking sheets. Once they’re on the parchment paper, you can shape them into more uniform circles and add a few more sprinkles to the top of the cookies, if you’d like.
Allow them to cool for 30 minutes on the counter or 15-20 minutes in the refrigerator. Once cookies are firm and hold their shape, they’re ready to enjoy!
TIPS & NOTES
Storage: Store your cookies in an airtight container at room temperature for up to 3 days. For longer freshness, keep them in the fridge for up to a week.
Avoid overcooking: Be careful not to overcook the butter, sugar, and milk mixture, as it could affect the final texture of your cookies. Let it come to a gentle boil for the right consistency.
Make ahead: You can prepare these cookies in advance and store them in the fridge, making them a great make-ahead treat for busy days or parties.

- In a medium or large sized saucepan, add the butter, sugar and milk. Cook over medium heat, making sure to stir often until the butter is melted and everything is smooth. Bring the mixture to a gentle boil and allow it to boil for about one minute, stirring often. (Careful not to overboil it.)
- Remove pan from the heat and stir in the vanilla extract. Once that's well combined, add the oats and mix well until most of them are coated. Then, add the sprinkles and gently fold them into the mix.
- Using a cookie scoop or a spoon, scoop out a spoonful of the mix and drop it on the prepared baking sheets. Once they're on the parchment paper, you can shape them into more uniform circles and add a few more sprinkles to the top of the cookies, if you'd like. (This recipe makes either 30 smaller cookies or 15 large ones. If you use a small spoon, about one tablespoon, you will get the smaller cookies. If you use a large spoon, about 2 tablespoons, you will get the larger ones.)
- Allow them to cool for 30 minutes on the counter or 15-20 minutes in the refrigerator. Once cookies are firm and hold their shape, they're ready to enjoy!
