Easy Slow Cooker Indian Chicken Curry with Potatoes
Ingredients
- 1½-2 lbs chicken breast
- 1 (13 oz) can full-fat coconut milk
- 1 cup chicken broth
- 1 tbsp minced garlic
- 3 tbsp curry powder
- ½ tbsp garam marsala
- 1 tsp ground ginger
- ½ tsp ground turmeric
- 1 tsp salt
- 2 tbsp butter
Optional Veggies:
- 1 red bell pepper
- 1 cup corn canned (drained) or frozen
- 1 lime for topping
- fresh chopped cilantro
Instructions
- Add the diced potatoes to the bottom of the Crock Pot.
- Add the coconut milk, chicken broth, garlic, curry, garam marsala, ginger, turmeric and salt. Gently stir until everything is mixed well.
- Lay the chicken in gently and make sure all the pieces are submerged in the sauce. Lay the slice of butter on top.
- Cook on HIGH for 3-4 hours or LOW for 6-8 hours.
- If you're adding veggies, like I did with the bell pepper and corn, put them in the slow cooker during the last hour of cooking so the bell peppers don't get too mushy. (You can also leave out the veggies if that's easier for you or use other ones you have on hand!)
- Once chicken is fully cooked (should be 165℉ inside and pull apart easily with a fork) you can either leave it in large pieces or shred it and place it back in the crock pot to soak up more of the sauce. Taste and adjust salt or seasonings, if needed.
- Enjoy as is or serve it with rice, naan bread or a side of veggies! Add some fresh chopped cilantro and a fresh squeeze of lime juice to your bowl to really brighten the flavors.

Ingredients Needed for Slow Cooker Indian Chicken Curry
- Chicken breasts – Boneless, skinless chicken breasts work great in this recipe and cook up tender in the slow cooker. Cut them into chunks or let them cook whole and shred some of the meat at the end for a more rustic texture.
- Coconut milk – Use full-fat coconut milk for the best flavor and a creamy, opaque curry sauce. Light coconut milk will work in a pinch but will result in a thinner, less rich sauce.
- Chicken broth – Chicken broth adds depth and helps thin the sauce just enough without diluting the flavor. You can adjust the amount slightly depending on how thick you like your curry.
- Garlic – Fresh garlic is highly recommended for the best flavor. You can use jarred minced garlic or mince a few cloves finely, so it melts into the sauce as it cooks.
- Seasonings & spices – Curry powder, garam marsala, ginger, turmeric and salt all come together to give this dish the amazing flavor that it has.

Enjoy as is, or serve it with rice, naan or a side of veggies – like my Mediterranean Cauliflower. Don’t forget to squeeze some fresh lime juice on top! It really brightens the flavors in this curry recipe.
Tips For Perfect Flavor and Texture
Layer potatoes on the bottom: Placing the potatoes at the bottom of the crock pot ensures they cook evenly and soak up the curry flavor without getting mushy.
Don’t over-stir: Give everything a gentle stir at the beginning, then let it cook undisturbed. Too much stirring can cause the potatoes to break down.
Use full-fat coconut milk: This creates a rich, opaque sauce and prevents the curry from looking thin or watery.
Shred some of the chicken (optional): For a more rustic texture, shred a small portion of the tender chicken near the end of cooking and stir it back into the sauce.
Taste and adjust at the end: Slow cooking mellows spices, so a final pinch of salt or squeeze of lime right before serving really brightens the flavor.
Let it rest before serving: Allowing the curry to sit for 10–15 minutes after cooking helps the sauce thicken and cling to the chicken and potatoes.
Serving Suggestions and Side Dishes
- Serve over steamed white rice, brown rice, or basmati rice
- Pair with naan, flatbread, or warm pita for dipping
- Enjoy as-is like a hearty stew
- Spoon over cauliflower rice for a lighter option
- Serve alongside my Mediterranean Cauliflower, which goes so well with this chicken curry recipe
Storage and Reheating Tips
Storage: Let the curry cool completely, then store it in an airtight container in the refrigerator for up to 4 days. The flavors continue to develop as it sits, making leftovers even better.
Reheating: Reheat in the microwave until warmed through.
Freezing: This curry freezes well for up to 2 months. Thaw overnight in the refrigerator before reheating.
FAQ’s
Yes, chicken thighs work very well in this recipe. Boneless, skinless chicken thighs stay extra tender and juicy in the slow cooker. You can use them exactly the same way—either cut into chunks or shredded at the end—and they’ll add even more richness to the curry.
A few common mistakes to avoid include using light coconut milk, which can make the sauce thin and watery. If you’re adding any kind of delicate vegetables, you may want to add them to the crock pot later on so they don’t get too soft and mushy. And always be sure to taste and adjust seasoning at the end, since slow cooking can mellow spices and salt levels. A little extra salt or a squeeze of fresh lime juice can really boost the flavors.
Raw chicken typically takes 6–7 hours on LOW or 3–4 hours on HIGH to fully cook in a crock pot, depending on the size of the pieces. The chicken is done when it reaches an internal temperature of 165°F (74°C) and is tender enough to shred easily with a fork.
Yes, you can absolutely put coconut milk in the slow cooker. For best results, use full-fat coconut milk, which holds up well to long cooking times and creates a rich, creamy sauce without separating.
