Why You’ll Love This Mexican Street Corn Mac and Cheese

  • Easy, one pot meal. Everything cooks in one pot, making cleanup a little easier.
  • Amazing flavor. If you love the flavors of elote or esquites, this pasta version captures that same delicious combination of creamy, tangy, and slightly smoky flavors. If you want the corn on its own without the pasta, don’t miss my Esquites (Mexican Street Corn in a Cup) recipe — it’s the perfect creamy side.
  • Family-friendly with a fun twist. It’s still cozy mac and cheese, but with a flavorful upgrade that makes dinner feel a little more exciting — similar to my Mexican White Spaghetti (Espagueti Blanco), another creamy pasta dish that kids love.

Ingredient Notes & Substitutions for Mexican Mac & Cheese

Protein pasta – Using protein pasta helps boost the protein in this dish (I love this brand), but any regular short pasta shape like elbow macaroni, shells, or rotini will work well. Just be sure to check the package instructions for cooking time since all pasta can be different. To turn this into an even more protein-packed meal, serve it alongside my Salsa Verde Chicken for an easy, flavorful dinner.

Corn – Sweet corn is what gives this dish its classic street corn flavor. Fresh corn cut from the cob works great, but frozen or canned corn can be used for convenience. If using frozen corn, let it thaw slightly before cooking.

Mexican crema (cream) – Mexican crema adds a rich, slightly tangy creaminess similar to the sauce used in esquites or elote. It’s usually found near the sour cream in most grocery stores. If you can’t find it, you can substitute sour cream or plain Greek yogurt. Greek yogurt will be a little thicker and tangier than crema, so you may want to stir in a small splash of milk to loosen the sauce if needed.

Cheddar cheese – Cheddar melts well and gives the sauce its classic mac and cheese flavor. Monterey Jack or a Mexican blend cheese would also work nicely if you want a slightly milder flavor.

Mayonnaise – A small amount of mayonnaise helps mimic the creamy flavor of traditional Mexican street corn. If you’re not a fan, you can replace it with a little extra crema.

Tajín (optional topping) – A sprinkle of Tajín is a great finishing touch for this dish and adds the classic chili-lime flavor often found on Mexican street corn. If you don’t have Tajín, you can simply sprinkle a little chili powder and extra lime juice instead.

Tips for the Best Mexican Street Corn Mac and Cheese

Let the corn get slightly charred
Cooking the corn until it develops a few golden brown spots helps create the roasted flavor that makes Mexican street corn so delicious.

Use freshly shredded cheese if possible
Freshly shredded cheddar melts more smoothly than pre-shredded cheese, which often contains anti-caking agents that can make the sauce slightly grainy. It depends on the brand and quality of the pre-shredded cheese so just be cautious.

Reserve a little pasta water
If the sauce becomes too thick after adding the pasta, a small splash of reserved pasta water can help loosen the sauce and make it extra creamy.

Finish with lime and Tajín
A squeeze of fresh lime juice and a light sprinkle of Tajín at the end really bring out the classic street corn flavors.
