I love cauliflower SO much. I think it’s such an underrated vegetable. It’s super mild in flavor, so it’s the perfect base for all different types of spices and seasonings. This Mediterranean Roasted Cauliflower is one of my favorite ways to enjoy it — it’s flavorful, easy, and packed with nutrition.

INGREDIENT NOTES

  • Cauliflower – I try to find the largest head of cauliflower I can. And it’s important to note that you should try to cut the cauliflower into 1-1½ inch size florets. The bigger they are, the longer they take to cook.
  • Extra virgin olive oil – Helps the roasting process and it’s a heart-healthy fat that’s full of antioxidants and healthy monounsaturated fats.
  • Seasonings – A warm and earthy mix of cumin, coriander, garlic powder, turmeric, smoked paprika, salt and pepper give this roasted cauliflower the best Mediterranean-inspired flavor.
  • Optional toppings – A squeeze of fresh lemon juice and a sprinkle of chopped parsley make great finishing touches if you have them — they add a bright, fresh contrast to the warm spices. The cauliflower is also delicious dipped in a little bit of plain Greek yogurt.

HOW TO MAKE ROASTED MEDITERRANEAN CAULIFLOWER

Preheat oven to 425℉. Grab a baking sheet. You can either roast the cauliflower directly on the pan or line it with parchment paper.

In a medium sized bowl, add the extra virgin olive oil and seasonings (cumin, smoked paprika, coriander, garlic powder, turmeric, salt and pepper). Stir until everything is mixed well.

Add the bite-sized cauliflower florets and gently toss with the olive oil mixture until all the cauliflower is evenly coated. (Try to keep the cauliflower pieces between 1-1½ inches. The bigger the pieces are, the longer they take to cook.)

Pour cauliflower onto the baking sheet and spread evenly, making sure the florets are spaced out and don’t overlap. Roast for 10 minutes and then gently toss. Roast for another 10 minutes and check for doneness. (They should be soft when poked with a fork.) If still too firm, then cook for another 5 minutes.

Top with chopped fresh parsley and a squeeze of fresh lemon, if desired. Serve immediately!

TIPS & NOTES FOR THE BEST ROASTED CAULIFLOWER

Cut cauliflower into evenly sized florets so everything roasts at the same rate and gets those golden, crispy edges. The bigger the cauliflower pieces are, the longer they take to cook.

Toss the cauliflower well to coat every piece evenly in the spices — your hands work best!

For extra browning, roast the cauliflower directly on the pan instead of using parchment paper. While parchment makes cleanup easier, direct contact with the hot pan helps create an even deeper caramelization and crispier edges.

FAQ’s

What’s the best way to cut cauliflower for roasting?

For the best results, cut the cauliflower into evenly sized florets so they roast at the same speed. Start by removing the outer leaves and trimming the stem, then cut the head into quarters and break it into bite-sized florets. Try to keep them similar in size—this helps the cauliflower caramelize evenly and prevents smaller pieces from burning before larger ones are tender.

Can I roast frozen cauliflower, or does it only work with fresh?

Yes, you can roast frozen cauliflower, but fresh cauliflower will give you the best texture and browning. If using frozen cauliflower, roast it straight from frozen—do not thaw first—and expect a softer texture with less crispness. For best results, use a high oven temperature and spread the florets in a single layer without overcrowding.

What are good serving suggestions for roasted Mediterranean cauliflower?

Roasted Mediterranean cauliflower is incredibly versatile. Serve it as a side dish with grilled or Italian chicken, salmon, or lamb, or use it as a base for grain bowls with rice, quinoa, or couscous. It’s also delicious tossed into salads, wrapped in pita with hummus, or served alongside tzatziki or a yogurt-based sauce for a complete Mediterranean-style meal.

How do I store and reheat leftover roasted cauliflower?

Store leftover roasted cauliflower in an airtight container in the refrigerator for up to 4 days. To reheat, warm it in the oven or air fryer at 375°F until heated through to help restore some crispness. You can also reheat it in the microwave, though the texture will be softer.

Marvelous Mediterranean! I doubled this recipe with 1 bag of precut cauliflower from Costco. After it was “done” roasting (about 25 min), I gave it 3 more minutes on a full broil to fry the edges, turned them and did 3 more, finishing before the dark brown crispy edges turned black and loved that crispy, fried texture. Topped with the lemon juice and loved it! Finally able to make cauliflower like one of my favorite restaurants. With how easy it is, this will be a fixture in our vegetable rotation.
