Alice Springs Chicken is a popular dish from Outback Steakhouse made with grilled chicken, honey mustard sauce, bacon, cheese, and mushrooms. This version keeps all the classic flavors but skips grilling and the mushrooms for a simpler, family-friendly twist.

Key Ingredients & Substitutions for Alice Springs Chicken
- Chicken – Boneless, skinless chicken breasts work best here. If they’re thick, slice them in half horizontally or pound them slightly so they’re all about the same thickness. This helps ensure that they cook evenly and stay juicy.
- Bacon – Cooked and chopped bacon adds that classic savory flavor. You can also use real bacon bits to save time—just make sure they’re made with real bacon for the best flavor.
- Cheese – I love using cheddar cheese but Colby and Monterey Jack also work well. You can use sliced or shredded—whichever one you have on hand.
- Seasonings – A simple mix of salt, pepper, garlic powder, and paprika adds flavor without overpowering the honey mustard sauce.
- Honey Mustard Sauce – A quick mix of Dijon mustard and honey creates the perfect sweet & tangy base.

Alice Springs Chicken (Honey Mustard, Bacon & Cheese)
Ingredients
- 4 boneless, skinless chicken breasts about 1½ pounds
- 1 tsp garlic powder
- 1 tsp paprika
- salt & pepper to taste
Honey Mustard Sauce:
- ¼ cup Dijon mustard
- ¼ cup honey
- 1 tbsp mayonnaise
- 1 tsp apple cider vinegar
Toppings:
- 4 slices cooked bacon, chopped OR real bacon bits
- 4 slices cheese (cheddar, monterey jack or colby jack) or about 1 cup shredded cheese
Instructions
- Preheat oven to 400℉. In a small bowl, add all the honey mustard sauce ingredients and whisk until smooth and creamy. Taste and adjust honey or vinegar to your liking. Set aside.
- Prep the chicken. If the breasts are extra thick, slice them in half or pound all the pieces so they're about the same thickness. This really helps the chicken to cook evenly.
- In a 9×13 baking dish, add the chicken breasts and sprinkle the seasonings evenly on top. Gently rub the seasoning into the chicken. (Garlic powder, paprika, salt and pepper.)

- Spoon the honey mustard sauce over each piece of chicken but be sure to save some of the sauce for dipping, if desired.

- Bake uncovered for 15-20 minutes, or until chicken reaches an internal temperature of 165℉. Remove from the oven and add a slice of cheese to the top of each piece of chicken. Then, sprinkle each one with bacon pieces.
- Put the dish back in the oven and bake for another 1-2 minutes, just enough to melt the cheese.
- Drizzle some extra honey mustard on top or serve some on the side and enjoy!

Tips for the Best Alice Springs Chicken
- Use evenly sized chicken breasts – If your chicken is thick, slice it in half horizontally or pound it slightly so it cooks evenly and stays juicy.
- Don’t overbake the chicken – Chicken breasts can dry out quickly. Bake just until they reach 165°F, then add toppings and finish for no longer than 2 or 3 minutes.
- Add the cheese at the end – This keeps it perfectly melted and bubbly instead of greasy or overcooked.
- Balance the honey mustard to your taste – If you prefer it sweeter, add a little more honey. For more tang, increase the Dijon mustard slightly.
Storage & Reheating
- Refrigerate – Store leftover Alice Springs chicken in an airtight container in the fridge for up to 3–4 days.
- Reheat in the oven (best method) – Place the chicken in a baking dish, cover loosely with foil, and warm at 350°F for about 10–15 minutes, or until heated through. This helps keep the chicken juicy and prevents the cheese from overcooking.
- Reheat in the microwave (quick option) – Heat in 30-second intervals until warmed through. Add a small splash of water or cover with a damp paper towel to keep it from drying out.
- Reheat tip – If the cheese has already melted into the sauce, you can add a little extra shredded cheese on top before reheating to freshen it up.
