This delicious breakfast casserole is a healthy twist on a classic. Most breakfast casseroles use frozen hash browns or tater tots, but this one starts with fresh, roasted potatoes that get topped with cheese, smoked turkey, fresh spinach, onions, eggs and seasoning.

It all comes together to make a delicious, cheesy casserole with a slightly smoky flavor that’s perfect for both breakfast and dinner. You can also make this ahead of time if you’re having guests over and want to free up your time in the kitchen.

WHY YOU’LL LOVE THIS

Customize It: Don’t care for onions or spinach? Simply leave them out. You could also add any of your own personal favorite veggies, bacon or sausage. (Just keep the base of eggs and potatoes the same.) I like to make mine with chopped smoked turkey. It’s easy to prepare and adds a delicious smoky flavor to the casserole, which is the way I’ll teach you how to make it below.

Easy to Make: All you really need to do is chop the potatoes, turkey, spinach and onion! It takes a few minutes, but it’s so worth it to make this with fresh, flavorful ingredients. The rest is throwing everything together in a baking dish and letting the oven go to work.

Make Ahead: Prepare the casserole as directed, then cover and refrigerate for up to 2-3 days. This makes it a perfect meal prep option for busy mornings or evenings! Just because it’s called a Healthy Breakfast Casserole doesn’t mean you can’t enjoy this for dinner too. (See below for Reheating Instructions.)

WHAT YOU NEED

For the roasted potatoes:

  • baby potatoes
  • butter
  • smoked paprika, salt & pepper

For the egg mix:

  • eggs
  • milk 
  • smoked paprika, salt & pepper

The rest:

  • spinach
  • onion, chopped fine 
  • smoked deli turkey
  • cheese – I used a Mexican-style blend of cheese. I get this kind at Costco.

STEP-BY-STEP INSTRUCTIONS

Preheat the oven to 375 degrees and spray a 9×13 casserole dish with nonstick cooking spray.

Chop the potatoes into small, bite-sized pieces.

In a large bowl, add the butter and microwave for about 15-20 seconds, until it’s fully melted. Add the smoked paprika, salt and pepper to the butter and mix well.

Pour the potatoes into the bowl and gently mix to combine.

Spread the potatoes evenly along the bottom of the baking dish and cook for 20 minutes, stirring halfway.

While you wait for the potatoes, you can use the same large bowl to mix your eggs. Add the eggs, milk, smoked paprika, salt, and pepper to the bowl and mix well. Set bowl aside.

Next, chop the spinach, red onion and turkey into small pieces.

Once potatoes are done, turn oven down to 350 degrees. (The potatoes should be soft when poked with a fork.)

Then, add the remaining ingredients. Start by sprinkling the cheese on top of the potatoes. (Save a little for sprinkling on at the end.)

Next, add the turkey, spinach and onions.

Gently mix it all together.

Next, pour the egg mixture evenly over the top. (Tip: pour very slow and it will be easier to evenly distribute.)

Sprinkle a little more cheese on top. Place it back in the oven at 350 degrees and bake for another 35-40 minutes, or until eggs have set.

You can enjoy this casserole as is, or you can add some toppings! Fresh salsa, sour cream and avocado slices go really well on this.

REHEATING INSTRUCTIONS

This is perfect for making ahead of time. You can completely bake it, let it cool and then cover it and place in the refrigerator for up to 2-3 days.

Microwave: To reheat in the microwave, place one serving on a plate and cut in halves or thirds. This helps the heat distribute more evenly in the microwave. Cook in 30 second intervals, checking each time if it’s the right temperature for you.

Oven: To reheat in the oven, cover and bake at 325℉ for about 20 minutes, or until warmed through in the center.

Ingredients

For Roasted Potatoes

  • lbs red or yellow potatoes diced
  • 3 tbsp butter
  • ½ tsp smoked paprika

  • ¼ tsp smoked paprika
  • ¼ tsp salt

Veggies/Meat

  • 1 cup spinach packed
  • ½ onion diced
  • 10 slices smoked turkey deli
  • cups cheddar cheese shredded

Instructions

  1. Preheat oven to 375℉ and spray a 9×13 baking dish with cooking spray, or grease with butter.

  2. In a large bowl, add the butter and microwave for about 15-20 seconds, or until it’s fully melted.

  3. Add the smoked paprika, salt and pepper to the bowl with butter. Mix the seasonings and butter, then add the potatoes and gently toss again.

  4. Spread the potatoes evenly along the bottom of the baking dish and cook for 20 minutes, stirring halfway.

  5. While you wait for the potatoes, you can use the same large bowl to mix your eggs. Add the eggs, milk, smoked paprika, salt, and pepper to the bowl and mix well. Set bowl aside.

  6. Next, chop the spinach, red onion and turkey into small pieces.

  7. Once potatoes are done, turn oven down to 350℉. (Potatoes should be tender when poked with a fork.)

  8. Sprinkle the cheese on top of the potatoes. Then, add the turkey, spinach and red onions to the top of the cheese. Gently mix together and spread evenly across the bottom of the pan.

  9. Next, pour the egg mixture evenly over the top of the potato mix. (Tip: pour slowly and it will be easier to evenly distribute.)

  10. Put it back in the oven at 350 degrees and bake for 35-40 minutes. (It's done when the center is firm and a toothpick comes out clean when poked in the center of the casserole.) Let it cool for 5-10 minutes.

  11. Serve with some fresh salsa or sour cream on top, and enjoy!
