One afternoon, my daughter and I wanted to make some homemade cookies together with ingredients we already had on hand. So, we decided to experiment a bit in the kitchen. After a couple tries, we ended up with a soft, chewy, delicious cookie that tasted just like a churro – which is why we decided to call them Churro Cookies! These are hands down our whole family’s new favorite cookie. Even my extra picky daughter loves them, which is saying a lot. 🙂

STEP-BY-STEP INSTRUCTIONS

In a medium-sized bowl, add the flour, cinnamon, baking soda and salt. Gently whisk together until well combined. Set aside.

In a large bowl, add the butter. Microwave for 20-30 seconds, until the butter is soft and just barely starting to melt. Add the brown sugar to the bowl.

Using a mixer, cream together the sugar and butter by beating on low for approximately 2-3 minutes, or until well blended. Add the egg and vanilla and beat until everything is just combined.

Add the bowl of dry ingredients to the wet mix. Beat about two minutes on medium speed. Dough should easily form a large ball when done mixing.

Cover and refrigerate for 15-30 minutes. This will help the dough firm up a bit more so that it holds it’s shape well and doesn’t stick to your hands when you roll it in the cinnamon sugar mix.

Shape dough into 1 inch balls and roll in the cinnamon sugar mix.

Place cookies an inch apart on a greased cookie sheet, or one lined with parchment paper or aluminum foil.

Bake at 350° for 10 minutes, or until edges turn light brown. Careful not to overcook.

Remove from oven and let them sit on the baking sheet for about five minutes. Then, move the cookies off the baking sheet to a cooling rack.

TIPS & NOTES FOR EASY CHURRO COOKIES

Small or large cookies? This makes about 48 small cookies (about 3/4 inch size dough balls) or 24 larger cookies (about 1½ inch size dough balls). If you choose to make them bigger, add an additional 1-2 minutes of bake time.

Chill the Dough: For best results, chill the dough for at least 15 minutes before baking. This helps the dough maintain its shape better when you roll it in the cinnamon-sugar mix.

Baking Time: Keep a close eye on the cookies as they bake. They should be slightly underbaked in the center when you take them out of the oven. They will continue to set as they cool, ensuring a soft and chewy texture.

Storage: Store the cookies in an airtight container at room temperature for up to a week. You can also freeze the dough balls before baking for up to three months, allowing you to bake fresh cookies whenever a craving strikes.

Make Ahead: If you’re short on time, you can prepare the dough a day in advance and keep it refrigerated. Just remember to let it sit at room temperature for a few minutes before scooping and rolling in the cinnamon-sugar mix.

    Easy to make and delicious! I almost never leave reviews on these recipes but this one deserves it. I had the sudden inkling to make something sweet since we didn’t have any snacks on hand and I found this recipe.
