WHAT’S A CAPRESE SANDWICH?

A Caprese sandwich is a twist on the classic Caprese salad, which is a traditional Italian salad that typically consists of fresh tomatoes, mozzarella cheese (usually buffalo mozzarella), fresh basil leaves, olive oil, salt, and sometimes balsamic vinegar. A Caprese sandwich takes all those healthy and delicious ingredients and puts them between your favorite bread, or in the case with my recipe, a bagel.

INGREDIENTS

  • Bagel – I personally love Dave’s Killer Bagels, which is what I used in this recipe. However, any bagel will work! Ciabatta and focaccia bread would also be delicious for this sandwich.
  • Pesto – While this isn’t a traditional ingredient in Caprese salad, it works as such a good spread on this sandwich to keep it from tasting to dry. You can make your own or use a premade pesto. I happen to love the Costco brand pesto.
  • Fresh tomato slices – You can’t have a Caprese sandwich without the fresh tomato slices!
  • Fresh mozzarella – You want to use fresh mozzarella in this, not the traditional Mozzarella that’s usually pre-sliced or in a block.
  • Baby spinach – This is another ingredient not used in traditional Caprese salad, but I happened to have some on hand and I’m always looking for ways to add fresh greens into my recipes. However, if you have fresh basil, that would be an excellent replacement. Or, better yet, use both! A couple leaves of baby spinach and a couple leaves of fresh basil be amazing. I didn’t have basil on hand, but I wish I did. 🙂
  • Balsamic vinegar – A drizzle of this in the sandwich is the perfect finish!

STEP-BY-STEP INSTRUCTIONS

Putting this together is super easy! Here’s how I assembled mine:

First, start with toasting your bagel.

Once the bagel is toasted, spread the pesto sauce on one half of the bagel.

Lay your fresh greens (baby spinach, basil leaves or both) on top of the pesto.

Add the fresh tomato next, and then the mozzarella slices.

Drizzle a little balsamic vinegar on top of the mozzarella, and sprinkle with some salt and pepper.

Top with the other half of the bagel and ENJOY!
