One of my favorite things about summer is that it’s the peak of peach season. Me and my daughters absolutely love fresh peaches. I like to slice them up and drizzle honey on top for a quick snack. Another thing I like to do with peaches is make my favorite Peach Salad with Honey Balsamic Dressing. It combines juicy peaches with chopped spinach and some other fresh ingredients, tossed in the most delicious vinaigrette. It’s definitely my favorite summer salad.

One of the best parts about this recipe is the honey balsamic dressing. It’s sweet and tangy flavor is the perfect compliment to all the other flavors in the salad. Plus, it’s healthy, quick to make and only takes a few ingredients.

And another good thing about this wholesome Peach Salad? It comes together in less than 15 minutes! So, whether you’re serving it up for lunch, as a side dish, or just a healthy snack, this Peach Salad is sure to be a new favorite.

INGREDIENTS

  • Spinach – A nutrient-packed leafy green that adds a fresh, vibrant base to the salad. You could also use a spring mix or other type of lettuce, if you have a certain preference.

STEP-BY-STEP INSTRUCTIONS

In a small bowl, whisk together the dressing ingredients until well combined. Set the bowl aside.

In a large bowl (a shallow one if you have it), make a layer with the chopped spinach.

Add the fresh sliced peaches, sliced avocado, blueberries, and fresh mozzarella balls to the top of the spinach.

Drizzle with desired amount of dressing right before it’s ready to be enjoyed. Serve as is or gently toss the ingredients.

This salad is best enjoyed immediately. However, if you want to save some, place the salad in an airtight container without the dressing. Store any leftover dressing in a separate container. This will help the salad last an extra day or two.

How Much This Makes: This recipe makes about two good-sized salads. If you’re making this for a larger group, be sure to adjust the ingredients.
