Peach Salad with Honey Balsamic Dressing

This healthy, colorful Peach Salad is a burst of fresh flavors for your mouth, tons of nutrients for your body and it comes together in less than 15 minutes!

Ingredients

  • 3 cups spinach or spring mix (your preference) chopped
  • 3 peaches sliced
  • 1 large avocado sliced
  • ½ cup fresh blueberries
  • ½ cup fresh mozzarella balls

Honey Balsamic Dressing

  • 2 tbsp extra virgin olive oil
  • tbsp balsamic vinegar
  • 2 tbsp honey
  • ¼ tsp salt

Instructions

  1. In a small bowl, whisk together the dressing ingredients until well combined. (Olive oil, balsamic vinegar, honey, and salt.) Set aside.

  2. In a large bowl (a shallow one, if you have it) create a layer with the spinach.

  3. Add the fresh sliced peaches, sliced avocado, blueberries, and fresh mozzarella balls to the top of the spinach.

  4. Drizzle with desired amount of dressing right before ready to enjoy. Enjoy as is or gently toss the ingredients.
