Ingredient Notes for the One Pan Baked Dumplings
- Frozen dumplings – You can find frozen dumplings in the freezer section of most grocery stores. (I like these Bibigo ones.) Chicken, pork, or vegetable dumplings all work well. No need to thaw — add them straight to the baking dish so they hold their shape while baking.
- Coconut milk – Use full-fat canned coconut milk for the creamiest sauce. It’s typically found in the international foods aisle. Shake the can well before opening. Light coconut milk will work in a pinch, but the sauce won’t be quite as rich.
- Red curry paste – Red curry paste is usually located in the international aisle near Thai ingredients. Brands like Thai Kitchen (mild) or Mae Ploy (stronger) work well. Start with less if you’re sensitive to spice — you can always add more later. (Two tablespoons of the Thai Kitchen brand is perfect for my family, including my young daughters. Not spicy at all.)
- Flavor boosters – Ground ginger, brown sugar, soy sauce, sesame oil and garlic combine with the coconut milk and red curry paste to make the BEST sauce.

Tips & Notes
No thawing required – Use frozen dumplings straight from the freezer. This helps them hold their shape and prevents them from getting too soft.
Cook evenly – Arrange dumplings in a single layer so they cook evenly and crisp slightly on top.
Garnish – Finish with chili oil or fresh herbs after baking for extra flavor without adding heat to the whole dish. I love adding chopped cilantro and fresh lime juice to mine. (However, this dumpling bake is still delicious if you don’t have time to add any.)
Thicker sauce – Let the bake rest for a few minutes before serving so the sauce thickens slightly.
Storing Leftovers
Store any leftovers in an airtight container in the refrigerator for 3-4 days. The dumplings will soften slightly as they sit, but the flavors continue to develop and taste even better the next few days.
These reheat well in the microwave. I stir the sauce if it separated a little then add a few dumplings to a plate, spoon more sauce on top and reheat. I heat for one minute and then flip them and heat for another 30 seconds.
FAQ’s
No — you can bake them straight from the freezer. They cook perfectly in the sauce right in the oven, and baking them frozen keeps them from getting mushy.
Any frozen dumplings or potstickers will work — chicken, pork, veggie, shrimp, or whatever you prefer. Just make sure they’re arranged in a single layer so they cook evenly.
The heat mostly comes from the red curry paste and optional chili oil. For a milder version, use less curry paste or skip the chili oil topping — you can always add more spice after baking if you want. When I make this for my kids, I use two tablespoons of red curry sauce and skip the chili oil and that’s mild enough for them to enjoy.
Yes! This dumpling bake is easy to customize with extra vegetables. Thinly sliced bell peppers, mushrooms, shredded carrots, or snap peas all work well. Add heartier vegetables under the dumplings so they cook through and avoid overpacking the dish to prevent excess moisture.
Easy Dumpling Bake
Ingredients
- 15-18 frozen dumplings
- 1 (13.5 oz) can full-fat coconut milk
- 2 tbsp Thai red curry paste
- 1 tsp ground ginger
- 1 tbsp brown sugar
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- ½ tbsp minced garlic (or 3-4 cloves, finely diced)
Optional Toppings:
- chopped cilantro
- chili crisp oil
- squeeze of fresh lime juice
Instructions
- Preheat oven to 375℉.
- In a 9×13 baking dish, add the coconut milk, red curry paste, ginger, brown sugar, soy sauce, sesame oil and garlic. Gently stir until well combined.
- Lay the dumplings on top of the sauce, side by side. Put as many as you can fit without them overlapping. (I usually get about 18 dumplings in my dish.)
- Spoon some of the sauce on top of the dumplings. Cover the dish with foil.
- Bake covered for 20 minutes. Then, remove from oven and take off the aluminum foil. Bake uncovered for 5 minutes. (For slightly crispy dumplings, broil uncovered on HIGH for an additional 2-3 minutes.)
- Remove from oven and serve as is, or garnish with your favorite toppings like fresh cilantro, chili oil or a squeeze of fresh lime juice. Enjoy!
