Why You’ll Love These Funfetti Greek Yogurt Muffins

Soft and fluffy — Easy to follow recipe that results in perfectly soft muffins every time.

Loaded with rainbow sprinkles — Every bite has those classic funfetti pops of color and sprinkle crunch.

Kid-approved — My daughters ask for these constantly, and they always disappear fast. They’re great for snacks and lunchboxes.

Great for any occasion — Quick breakfast, lunchbox snacks, birthdays, or after-school treats.

Key Ingredient Notes for Funfetti Muffins

Dry ingredients – Flour, sugar, baking soda and salt make up the dry ingredients. Always be sure to measure these as accurately as possible. Baking soda should be fresh! Old baking soda is the #1 reason muffins come out flat. Test it by dropping a pinch in vinegar — it should fizz immediately.

Butter — Adds rich, bakery-style flavor. If you’d rather skip the butter, you can substitute it with equal parts oil — the muffins will still be soft and tender, just a touch less rich.

Olive oil or avocado oil — If you use oil, these are my go-to’s for the healthy fats, but any neutral oil like canola or vegetable oil works perfectly. Coconut oil works too, just melt it first.

Plain Greek yogurt — Whole, low-fat, or fat-free all work — I usually use whole milk Greek yogurt for the richest texture. Sour cream is a great 1:1 sub if that’s what you have. Don’t use vanilla or flavored yogurt — it’ll throw off the sugar balance.

Milk — Whole, 2%, or 1% all work. For a dairy-free version, unsweetened almond or oat milk are great substitutes.

Vanilla extract — Pure vanilla extract makes a noticeable difference here since funfetti is a vanilla-forward flavor. Don’t be shy with it.

Rainbow sprinkles — This matters more than you’d think! Use traditional waxy rainbow sprinkles (jimmies) — the long, skinny ones. Avoid nonpareils (the tiny round ball sprinkles) — they bleed colors and turn your batter gray. Quins (the flat shaped ones) also tend to melt and disappear.

Tips for the Best Sprinkle Muffins

Don’t overmix the batter — Stir wet and dry together just until you no longer see streaks of flour. A few lumps are okay! Overmixed batter = dense, tough muffins.

Fold sprinkles in last and gently — Add them after the batter is mixed and fold just 3–4 times. The more you stir, the more the colors bleed. Save a small handful to sprinkle on top before baking for that pretty bakery look.

Fill the muffin cups almost full — About ¾ to almost full gives you those tall, domed bakery-style tops. Skimpy muffin cups bake flat.

Start checking at 15 minutes — Every oven runs a little different. Insert a toothpick into the center of one muffin — it should come out clean or with just a few moist crumbs. If there’s wet batter, give it 1-2 more minutes.

FAQ’s

Can I make these funfetti muffins ahead of time?

Yes! These muffins are perfect for meal prep. Bake them up to 5 days ahead and store at room temperature, or freeze for up to 2 months. They’re a great grab-and-go option for busy mornings, lunchboxes, or a special snack.

Can I make these muffins dairy-free?

Yes — swap the milk for unsweetened almond, oat, or coconut milk, and use a dairy-free Greek-style yogurt (like Kite Hill or Forager). The butter can be replaced with extra oil or a vegan butter alternative.

Why did my sprinkles bleed into the batter?

This usually happens for one of two reasons: you used nonpareils (the tiny round ball sprinkles) instead of jimmies, or you overmixed the batter when folding the sprinkles in. Stick with traditional rainbow jimmies and fold them in gently — just 3 to 4 stirs.

Can I turn these into mini muffins?

Absolutely! Use a mini muffin tin and reduce the baking time to about 9-11 minutes. This recipe makes about 36 mini muffins — perfect for kids’ parties, lunchboxes, or baby showers.

Why are my muffins dense?

Dense muffins almost always come down to overmixing. Stir the wet and dry together just until you no longer see streaks of flour — a few lumps are totally okay. Cold ingredients can also cause density, so make sure your yogurt, milk, and egg are at room temperature.

Ingredients

  • 2 cups all-purpose flour
  • ¾ cup white sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • ¼ cup butter
  • ¼ cup olive oil or avocado oil
  • 1 cup plain Greek yogurt
  • ½ cup milk (whole, 2% or 1%)
  • 1 egg
  • 2 tsp vanilla extract
  • ½ cup traditional rainbow sprinkles

Instructions

  • Preheat the oven to 375℉ and prepare your muffin tins by adding muffin liners or spraying with cooking spray.
  • In a large bowl, add the flour, sugar, baking soda and salt. Whisk until mixed well. Set bowl aside.
  • In a medium sized bowl, add the butter. Microwave for 20-25 seconds. You want the butter soft and mostly melted.
  • Add the oil, Greek yogurt, milk, egg and vanilla extract to the bowl with melted butter. Whisk until well combined. (Try not to overmix.)
  • Pour the bowl of wet ingredients into the large bowl of dry ingredients. Using a spatula or large spoon, stir until just combined. Add the sprinkles and gently fold into the batter.
  • Fill each muffin cup almost full. Top with a few more sprinkles, if desired.
  • Bake at 375℉ for 15-17 minutes. Muffins are done when a toothpick inserted into the center comes out clean. (Mine are done right at 15 minutes but each oven can be slightly different.)
  • Let them cool for 5-10 minutes in the tray before removing. Enjoy or let them fully cool before storing. (Tip: If using muffin liners, they are much easier to remove when muffins are completely cooled.)

How to Store Funfetti Greek Yogurt Muffins

Room Temperature Store in an airtight container at room temperature for up to 3-4 days. Tip: Place a paper towel in the bottom of the container to absorb excess moisture and keep them soft.

Refrigerator Keep in an airtight container in the fridge for up to 5-6 days. Let them come to room temperature for about 20 minutes before serving — or pop one in the microwave for 10 seconds to bring back that soft, fresh-baked texture.

Freezer (Best for Meal Prep) These muffins freeze really well! Let them cool completely, then store in a freezer-safe bag or container for up to 2 months. Thaw at room temperature for an hour, or microwave straight from frozen for 20–30 seconds.

How to Reheat For that just-out-of-the-oven taste, microwave a muffin for 10–15 seconds. If you have a few minutes, warming them in a 300°F oven for 5 minutes brings back the crisp tops without drying them out.
