This Creamy Chipotle Lime Beef Pasta is our family’s new favorite comfort food dish. It’s a rich, cheesy pasta skillet loaded with browned ground beef and sweet corn, brightened up with lime and a little smoky heat from chipotle chili powder. My daughter is sensitive to spice, and she loved it. (I also show you how to increase the heat, if you want it spicier.) The whole thing comes together in about 30 minutes, making it an easy weeknight dinner the whole family can enjoy.
Why You’ll Love This Creamy Chipotle Lime Beef Pasta
- High in protein. Each of the 5 servings packs about 37g of protein, making this a filling, well-rounded dinner.
- Ready in about 30 minutes. This creamy chipotle lime beef pasta comes together fast, making it an easy win even on your busiest weeknights.
- Bold, comforting flavor. Smoky chipotle, bright lime, and sweet corn come together in a way you won’t find in a typical beef pasta.
- Kid-approved and adjustable. Even spice-sensitive eaters can enjoy this one, and it’s easy to dial the heat up or down for your family’s taste.

Key Ingredient Notes & Substitutions
Pasta – Any short shape works well here (shells, rotini, penne). Cook it just shy of al dente, since it’ll sit in the hot sauce for a few minutes and continue to soften. And don’t forget to scoop out that reserved pasta water before draining, in case you need to loosen the sauce later.
Ground beef – Use lean beef (90% or higher) if you can. Fattier beef will work, but you’ll want to drain the grease thoroughly so it doesn’t water down or separate the sauce.
Broth – You can use chicken, beef or vegetable broth.
Heavy cream – Stick with heavy cream rather than substituting milk or half-and-half. The higher fat content holds up much better once the lime juice goes in. Lower-fat dairy is more likely to curdle against the acid.
Cream cheese – Let it soften at room temperature before adding it, or at least cut it into small cubes if it’s cold. This helps it melt in smoothly instead of leaving little clumps in the sauce.
Chipotle chili pepper (powder) – Make sure you’re grabbing chipotle chili powder, not regular chili powder. They’re not really interchangeable, and chipotle brings a smokier, spicier flavor. It’s usually shelved with the other ground spices, not near the canned chipotles in adobo.
Corn – Canned or frozen both work. If using canned, drain it well so you’re not adding extra liquid to the sauce. Frozen corn doesn’t need to be thawed first. It’ll heat through right in the sauce.
Lime juice & zest – Use fresh limes rather than bottled juice for the best flavor, and zest the lime before you juice it. It’s much easier to zest a whole lime than one that’s already been squeezed.
Shredded cheese – Cheddar or Mexican-blend both work super well in this.

Tips for the Best Chipotle Lime Pasta
- Let the sauce rest before serving. It’ll look thinner than you’d expect right off the heat, but give it about 5 minutes covered. The cheese melts in and the sauce thickens up nicely as it sits.
- Add the lime juice at the very end, off the heat. Dairy sauces can curdle if lime juice hits them while they’re still actively simmering, so stir it in only after the burner’s off.
- Don’t skip draining the beef. Leftover grease in the pan can make the sauce greasy instead of creamy. Just carefully scoop it out with a spoon and safely dispose it.
- Save some pasta water. A splash of the reserved starchy water helps loosen the sauce if it thickens up more than you’d like once everything’s combined.
- Start on the milder end of the chili powder range. You can always add more heat, but you can’t take it out. Begin with ¾ teaspoon if you’re serving spice-sensitive eaters.
FAQs
Yes! Both swap in easily using the same method.
Store in an airtight container in the fridge for 3–4 days. Reheat in the microwave or the stovetop.
Bell peppers or poblano peppers are a natural fit. Sauté them alongside the garlic in step 3 for a little crunch and extra Southwest flavor. Spinach is another easy addition. Just stir a couple handfuls in near the end and let it wilt into the hot sauce right before serving. If you want to bulk it up further without changing the flavor much, diced zucchini sautéed in with the beef is a simple, kid-friendly way to sneak in more vegetables.
Creamy Chipotle Lime Beef Pasta
Ingredients
- 8 oz pasta any short noodle like shells, rotini, penne, etc.
- 1 lb lean ground beef I like to use 90% or higher
- ½ tsp cumin
- ¾-1 tsp chipotle chili pepper powder use ¾ tsp for a milder flavor (kid-friendly) or 1 tsp (or even a pinch more) for more heat
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp butter
- ½ tbsp minced garlic
- ¾ cup beef broth chicken or vegetable broth also work
- ½ cup heavy cream
- 4 oz cream cheese softened
- 1 cup corn canned or frozen
- 2 tbsp lime juice
- 2 tsp lime zest lightly measure without pressing into the spoon
- 1-1½ cups shredded cheddar or Mexican-blend cheese
Optional Topping:
- fresh chopped cilantro
- sprinkle of Tajín seasoning
Instructions
- PASTA: Boil the pasta in a medium-sized pot with salted water according to package instructions. Carefully scoop out about ½ cup pasta water once it's cooked, drain and set aside.
- COOK BEEF: In a large skillet over medium heat, add the ground beef and break it up as it cooks. Cook for about 5-7 minutes, or until no longer pink. Drain excess grease by carefully scooping out of the pan.
- Add the cumin, chipotle chili powder, salt and pepper and stir until the beef is evenly coated. Then push the beef to one side of the skillet.
- BUILD BASE: Reduce the heat to low. Add the butter to the empty side of the skillet, let it melt stirring often. Then, add garlic and cook for about 30 seconds or so. Mix the garlic and butter into the beef.
- FINISH SAUCE: Add the broth, heavy cream and cream cheese, stirring often for about 2-3 minutes or until sauce is smooth and cream cheese has fully blended in. If the cream cheese looks slightly chunky or separated at first, keep stirring; it'll smooth out into the sauce as it heats.
- LIME: Turn off heat and stir in the corn kernels, lime zest and cooked pasta, adding a splash of reserved pasta water if the pasta needs loosening. Mix the pasta with the sauce and then add the fresh lime juice and stir again. Taste and season with salt, pepper or more lime juice to taste.
- FINISH: Top with the shredded cheese, then cover and let it sit for about 5 minutes to let the cheese melt and the sauce thicken. Serve and top with cilantro or Tajín, if desired. Enjoy!
