These Snickerdoodle No Bake Cookies come together quickly with no oven required. Made with brown sugar and cinnamon, they have that classic snickerdoodle flavor in a chewy, no-bake cookie you can make any time of year. Perfect for busy weeknights, party cookie trays or any time you need a quick and easy dessert the whole family will love.
Line two baking sheets with wax or parchment paper and set aside.
In a medium saucepan over low heat, combine butter, milk, brown sugar, honey and cinnamon. Stir frequently until butter is fully melted. Keep the heat low — don't rush it.
Once butter is melted, increase to medium heat and bring to a full rolling boil, stirring constantly. Boil for exactly 1 minute (set a timer).
Remove from heat. Immediately stir in peanut butter and vanilla until fully combined and smooth.
Add oats and stir quickly until fully coated. Drop by heaping tablespoons onto prepared baking sheets. (Optional: sprinkle a pinch of flake salt on the top of each spoonful.)
Let cool at room temperature for 20–30 minutes until firm. Store in an airtight container at room temp for 5 days or in the refrigerator for up to 10 days. However, once you store them in the fridge, they need to stay there. Removing them and letting them come back to room temp will make them get slightly sticky.
