Healthy Breakfast Casserole

Diced potatoes are roasted, then topped with cheese, smoked turkey, fresh spinach, red onions, eggs and seasonings. It all gets baked to cheesy perfection!

Ingredients

For Roasted Potatoes

  • lbs red or yellow potatoes diced
  • 4 tbsp butter
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp pepper

For Egg Mix

  • 8 large eggs
  • ½ cup milk
  • ¼ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp pepper

Veggies/Meat

  • 1 cup spinach packed
  • ½ red onion diced
  • 10 slices smoked turkey deli
  • cups cheddar cheese shredded

Instructions

  1. Preheat oven to 375 degrees and spray a 9x13 baking dish with cooking spray, or grease with butter.

  2. In a large bowl, add the butter and microwave for about 15-20 seconds, or until it’s fully melted.

  3. Add the smoked paprika, salt and pepper to the bowl with butter. Mix the seasonings and butter, then add the potatoes and gently toss again.

  4. Spread the potatoes evenly along the bottom of the baking dish and cook for 20 minutes, stirring halfway.

  5. While you wait for the potatoes, you can use the same large bowl to mix your eggs. Add the eggs, milk, smoked paprika, salt, and pepper to the bowl and mix well. Set bowl aside.

  6. Next, chop the spinach, red onion and turkey into small pieces.

  7. Once potatoes are done, turn oven down to 350 degrees. (Potatoes should be tender when poked with a fork.)

  8. Sprinkle the cheese on top of the potatoes. Then, add the turkey, spinach and red onions to the top of the cheese. Gently mix together and spread evenly across the bottom of the pan.

  9. Next, pour the egg mixture evenly over the top of the potato mix. (Tip: pour slowly and it will be easier to evenly distribute.)

  10. Put it back in the oven at 350 degrees and bake for 35-40 minutes. (It's done when the center is firm and a toothpick comes out clean when poked in the center of the casserole.) Let it cool for 5-10 minutes.

  11. Serve with some fresh salsa or sour cream on top, and enjoy!
