This delicious, easy meal is one your whole family will love. It's perfect for a busy weeknight because it's fast, easy and there's only one pan to clean!
Cook ground beef over medium-high heat until no longer pink and drain fat, if any. (I prefer to use extra lean meat so there’s usually not much to drain. Ground turkey works just as well in this.) Next, add the garlic, salt, pepper, paprika, taco seasoning and mix well. Cook for just a minute or so.
Then, add the can of diced tomatoes, chicken broth and orzo. Bring to a boil. Turn heat down to medium-low, mix ingredients well and cover. Cook for approximately 10-15 minutes, stirring occasionally throughout, so the orzo doesn’t stick to the bottom of the pan.
Once the orzo is fully cooked and most of the liquid is absorbed, add in the cheese and stir. Top it off with some green onion, sour cream or whatever else you please. Enjoy!
This recipe does well with just about any of your favorite veggies thrown in! I love to add some zucchini, fresh corn off the cob and bell peppers. However, my two little ones are not big on eating vegetables these days so I kept it super simple in the recipe.
