Soft and fluffy lemon blueberry Greek yogurt muffins made with fresh lemon zest, juicy blueberries and Kodiak mix for extra protein. Perfect for breakfast, snacks or meal prep.
Preheat oven to 350°F. Prepare your muffin tray with muffin liners or grease with butter or nonstick cooking spray.
In a large bowl, add the dry ingredients and whisk until mixed well. (Kodiak mix, flour, baking soda, baking powder and salt.) Set aside.
In a medium bowl, add the butter and microwave in 15-20 second intervals until fully melted. Add the oil and brown sugar and whisk until smooth.
Add the Greek yogurt, milk, eggs, vanilla, lemon zest, and lemon juice to the medium bowl with the butter and sugar mixture. Whisk until fully combined.
Pour the wet ingredients into the large bowl of dry ingredients and stir gently until just combined. Do not overmix.
Add the blueberries and gently fold into the mix. Fill each muffin cup almost full. (This makes me about 14-15 regular sized muffins.)
Bake at 350℉ for 18-22 minutes, or until a toothpick inserted in the center comes out clean. (Mine are done right at 19 minutes.) Let cool. Pro tip: If you're using muffin liners, they become much easier to remove when the muffins are fully cooled.

*You can use regular flour instead of Kodiak mix if you don't have it. If not using Kodiak mix, use two cups of flour instead. Protein amount will be slightly less, but the muffins will still be soft and delicious.
