These easy oven fried chicken breasts are breaded and baked until crispy on the outside and perfectly tender inside — less mess and no deep frying required. A simple way to make oven-baked breaded chicken every time.
Preheat oven to 425°F. Place a baking sheet in the oven while it preheats to heat the pan. This is one step in making sure the chicken gets crispy.
Pat chicken dry with paper towels. If breasts are thick, pound lightly to even thickness. Season both sides with salt and pepper.
In one bowl, whisk together the eggs. In a separate bowl, combine breadcrumbs, Parmesan, olive oil, garlic powder, paprika, and pepper. Mix well so oil is evenly distributed among the breadcrumb mixture.
Carefully remove the hot baking sheet from the oven once it's done preheating. Line with parchment paper and lightly spray with cooking spray.
Dip each piece of chicken into the egg wash, then press firmly into the breadcrumb mixture, coating both sides well.
Place chicken on the prepared baking sheet, leaving space between pieces. Bake for 10 minutes, then flip the chicken pieces to the other side. Continue cooking for 8-12 minutes, until internal temperature reaches 160°F (it will rise to 165°F while resting). For extra browning, broil for 1–2 minutes at the end.
Let chicken rest for 5 minutes before slicing to keep it juicy. Serve with pasta, rice, veggies or a simple salad. Enjoy!
