Corn Pudding Casserole

This Corn Pudding Casserole is a family recipe that's creamy, sweet and melt-in-your-mouth delicious. Easily double it for large gatherings and just use a 9x13 dish instead!

Ingredients

  • ½ cup butter
  • 1 cup canned corn (drained)
  • 1 15.3 oz can of cream style sweet corn
  • 8 oz sour cream
  • ¼ cup sugar
  • 1 8.5 oz box Jiffy corn muffin mix

Instructions

  1. Preheat oven to 375 degrees and spray an 8x8 baking dish with cooking spray.

  2. In a large bowl, add butter and microwave in 20 second increments, until fully melted.

  3. Add the rest of the ingredients and mix to combine well.

  4. Pour into an 8x8 baking dish and spread evenly.

  5. Bake at 375 degrees for one hour. Let cool for 10-15 minutes before serving. Enjoy!
