Ingredients

  • 1 ½ cups macaroni noodles** uncooked
  • 2 cups spinach, packed
  • 6 tbsp butter
  • 1 tsbp minced garlic
  • ½ cup heavy whipping cream
  • ½ cup Parmesan cheese
  • 2 tsp salt
  • 1 tsp pepper

Instructions

  1. Bring a large pot of water to a boil. While you wait, roughly chop the spinach into small pieces.

  2. Once water is boiling, cook pasta according to the package instructions. Drain well and leave noodles in the strainer while you make the sauce.

  3. Return the pot to the same burner you were using and add the butter and garlic. Turn heat to medium and cook for a minute or two, until butter is melted and mixed with the garlic.

  4. Next, add the chopped spinach, cream and Parmesan to the pot.

  5. Turn heat down to medium-low and stir until everything is mixed well. Cook for another minute or two, stirring frequently.

  6. Once sauce is done, add the noodles back to the pot and mix it all together. Top with additional Parmesan if you want, and enjoy!
