Total Time 35 minutes
Servings 6

Ingredients

  • 1 32oz bag tater tots frozen
  • 1 lb ground turkey
  • 1 tbsp cumin
  • ½ tbsp chipotle chili pepper
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ¼ cup broth or water
  • 1 bell pepper any color, diced
  • 1 cup corn
  • ½ onion thinly sliced
  • ¼ cup fresh cilantro chopped
  • 2 cups cheddar cheese shredded

For the Spicy Crema (Cream):

  • ½ cup sour cream
  • 1 tbsp Tapatío hot sauce

Instructions

  1. Preheat oven to 425 degrees. Line a baking sheet with aluminum foil or parchment paper. Spread tater tots evenly in one layer.

  2. Bake tater tots for 20 minutes, stirring them halfway through.

  3. While the tater tots are baking, cook the ground turkey. In a large skillet, add about a tablespoon of cooking oil. Over medium heat, add the ground turkey and cook until there's no more pink.

  4. Add the cumin, chipotle chili pepper, smoked paprika and salt to the pan. Stir to mix the seasonings with the meat. (You could also replace these with taco seasoning, if you have that instead.)

  5. Next, add the broth or water and mix everything well. Turn the heat to low and push the meat to the side of the pan. Add the bell pepper and cook for about 3-4 minutes, or until it starts to soften.

  6. After the tater tots have baked for twenty minutes, sprinkle the ground turkey, bell pepper, corn and cheddar cheese evenly across the top.

  7. Bake for an additional five minutes, or until the cheese is fully melted.

  8. Add some fresh toppings, like cilantro, sliced onions, avocado and spicy cream! Enjoy! (Notes on how to make the spicy cream are above.)
