Bean Salad Ingredients & Substitutions
Beans – I love using a mix of cannellini and black beans. However, you can substitute kidney beans, pinto beans, or chickpeas for the black beans. For the white beans, butter beans, great northern or navy beans also work well.
Veggies – Corn, cucumber, bell pepper, onion and spinach are tossed with the beans and creamy chipotle dressing. They all bring their own flavors and texture. You can easily swap out what you don’t like and add what you do.
Greek Yogurt – Greek yogurt creates the creamy, high-protein dressing. For the best texture, use plain Greek yogurt. If needed, you can substitute sour cream or use half yogurt and half mayonnaise for a richer dressing.
Chipotle Flavor – The smoky chipotle flavor comes from chipotle seasoning or chipotle powder. You can also use a small amount of minced chipotle peppers in adobo sauce for a slightly spicier flavor.
Cilantro – Cilantro adds fresh, citrusy flavor. If you’re not a fan, simply leave it out or substitute fresh parsley.
What Kind of Dressing Do You Use for a Bean Salad?
For this recipe, we use a creamy Greek yogurt dressing with chipotle and lime. It’s a lighter twist on traditional bean salad dressings, which are often oil-based or made with mayonnaise.
The Greek yogurt helps to create a creamy, tangy, and slightly smoky dressing. It pairs perfectly with the beans and fresh vegetables while also adding extra protein.
If you prefer, you can customize it by using sour cream or a mix of Greek yogurt and mayonnaise for a richer taste, but the yogurt-based version keeps the salad lighter and more nutritious.

Helpful Tips & Notes
Adjust the spice level – Chipotle seasoning adds a smoky heat. If you prefer a milder salad, start with a small amount and adjust to taste. For more spice, add a little extra chipotle powder, cayenne powder or minced chipotle peppers in adobo sauce.
Let the salad chill before serving – This salad tastes even better after sitting in the refrigerator for 15–30 minutes, which allows the flavors to blend together.
Drain the beans well – Be sure to rinse and drain the beans thoroughly. Removing excess liquid helps keep the dressing creamy instead of watery.
Customize with what you have – This salad is very flexible. You can easily add avocado, tomatoes, jalapeño, shredded chicken, or queso fresco depending on what you have on hand.

For the dressing:
- ¾ cup plain Greek yogurt
- 1 tbsp olive oil
- ½ tsp garlic powder
- ¼ tsp chipotle chili pepper powder (for more spice, add ½ tsp)

Optional Mix-Ins:
- Tajin seasoning

Instructions
- In a large bowl, add all the dressing ingredients and mix until everything is combined.
- Make sure the black beans, white beans and corn have fully drained. Add them to the large bowl along with the onion, bell pepper, cucumber, spinach, cilantro and your cheese of choice.
- Gently toss until everything is coated with the creamy chipotle dressing. Cover and refrigerate for at least 30 minutes before serving. Taste – if the dressing is too smoky for you, stir in one tablespoon of honey. Adjust salt & pepper if needed. You could serve this as is, but I love to sprinkle some Tajin and drizzle some hot honey on top right before serving.
